Citric acid is used as an acidity regulator and preservative in food and drink. It provides a fresh taste, prevents discolouration and extends shelf life.

Citric acid is added to products such as soft drinks, sauces, confectionery, jams, baked goods and canned foods.

Although the substance occurs naturally in citrus fruits, almost all citric acid used in food is produced industrially. It is made by fermenting sugar or molasses in a controlled process, after which the liquid is purified and dried into a sour, white powder.

The use of citric acid is not considered ultra-processed because it is a naturally occurring substance that is added solely to improve shelf life and food safety.
